'Ika-no-ikizukuri or ikezukuri', very fresh squid sashimi arranged in the original shape of the fish, is wonderfully tasty.

Squid sashimi is served at any Japanese-style restaurant throughout the country, however 'ika-no-ikizukuri', that is a super-fresh sashimi of squid kept alive in a fish tank right before it is prepared, is a specialty on the northern coast of Kyushu. In this district, Yobuko in Saga Prefecture is widely known in Japan, yet this delicacy can be found in Fukuoka City too. The sashimi in the picture taken at a tavern in Fukuoka was extremely fresh and so the meat was transparent because it was prepared as soon as possible after being taken out of the pool. Some people are unfortunately reluctant to try it, having no idea of its good taste, on the ground that the arms and eyes of it are still moving on the plate.
